Tonite I wanted to spruce up a simple rice and chicken meal so I pulled off a corn and bean salad from whatever was in the fridge.
I had beans and corn and jalapeños and olive oil and cilantro.
No lime.
I almost ran to the store for one… But I had no desire to do so.
I remembered that I had some Lime essential oil in my essential oil kit of goodness. Every time I use a few drops of one of their oils to accent a meal, I am pleased!
I added a few drops of Lime to the olive oil salt & pepper for a more even distribution of flavor, and although it did not bring in the sour, a few drops (I wouldn’t try it with just any old lime essential oil!) of lime brought the flavor in full effect.
Because the flavor was so good, I chose not to add a sour element with the rice vinegar I had. It was delicious just as it was.
Instead, I made a cilantro lime dressing and allowed the sour cream to bring the sour into the mix.
I will post an entry the next time I make the lime cilantro dressing and share that recipe too.
